April Fool’s Day

April Fool’s is a worldwide holiday celebrated in many countries on the first of April every year. While it is not a national holiday, it is definitely celebrated by pranksters as a day full of jokes. 

In countries such as Italy, Belgium and France, people tacked paper fish onto one another’s backs as a trick and shouted “April fish” in their native language. You might have seen such fish on vintage postcards from those countries proclaiming pesce d’aprile or poisson d’avril!

Spinach and Mushroom Quiche

¼ cup olive oil

1 package sliced mushrooms

1 package of fresh chopped spinach

1 cup milk

3 eggs

1 cup grated Swiss cheese

¼ teaspoon pepper

¼ teaspoon salt

1 prepared pie shell

Preheat oven to 325 degrees.

Sauté mushrooms and spinach in olive oil.

Beat together milk and eggs and add seasonings

Combine milk and eggs with cheese, mushrooms, and spinach.

Pour into prepared pie shell.

Bake for 35 minutes.

Serves 4-6 people

Go Green!!!

Earth Day week is April 22^nd.  We are constantly told to Go Green, Recycle, and Save!  Here are a few ideas:

1. Install compact florescent light bulbs when older incandescent bulbs burn out.
2. Turn off lights when you leave a room.
3. Install a low-flow showerhead.
4. Use less gas. Walk, bike or carpool to work. If you do drive, combine all your errands for the week in one trip.
5. Buy locally raised humane and organic meats, dairy, fruits, and vegetables.
6. Stop using bottle water.  Install a water filter to purify tap water.
7. Do not throw away electronics. Donate items at electronic recycle days.
8. Switch one appliance to an energy efficient model (energy star label).
9. Wash laundry in cold instead of warm or hot water.
