As you know, ticket and pass sales only cover a small part of our annual budget. We need your help to sustain our efforts and help us bring “light” through film.

POTATO LATKES
(makes 18)
Ingredients:
- 3 large Yukon Gold potatoes, grated
- 1 large onion, chopped finely
- 3 eggs whisked together
- 3 tablespoons flour
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 teaspoons kosher salt
- 1 teaspoon pepper
- Vegetable or peanut oil for frying
Directions:
- Place all ingredients in a bowl and mix well.
- Using a heavy frying pan, add 3 tablespoons of oil and heat until hot.
- Place a scoopful of the mixture in your hands and squeeze out all the liquid.
- Place latkes into the hot frying pan and cook until golden and crispy on each side. Place cooked latkes on a paper towel to drain, and repeat until all latkes are cooked.
