After teaching live boot camp for 10 years, I’m so excited to bring that same boot camp style to people across the country. Sun-dried Tomato and Lemon Pasta with Chicken
If you are looking for a citrus flavor explosion and tons of tomato goodness, look no further than this recipe. Enjoy!
Ingredients
-1 lbs. chicken breast (optional if you'd like to make recipe vegetarian)
-2 TBSP olive oil, divided
-1 package of vacuum packed sundried tomatoes
-1 cup hot water
-2 lemons, juiced
-1 garlic clove, chopped
-1 tsp. red pepper flake (optional)
-1 TBSP chopped fresh basil
-2 cups cooked whole wheat pasta
-¼ cup crumbled Feta cheese (optional, but oh so good!)
-9 oz. bag of baby spinach
Method:
One hour before you plan to start cooking, place the tomatoes and 1 cup of hot water in a small glass bowl. Allow to steep.
Cook the whole wheat pasta according to directions. When you add the pasta to the boiling water, start the chicken in a large pan or wok with the olive oil over very high heat. Using a wooden spoon, stir fry the chicken, never letting it stop moving in the pan to cook it quickly and brown.
Remove the chicken from the pan and wipe out or wash if there are burnt bits. Chop the tomatoes and reserve (keep) the water from the tomatoes. Add the second tablespoon of olive oil to the pan over medium heat and toss in tomatoes. Cook for 5 minutes, add the garlic and red pepper flake and cook for another minute. Add the chicken back to the pan and deglaze the pan with the reserved tomato water. Stir in the lemon juice, basil, cooked pasta, feta and baby spinach. Toss with two wooden spoons (like a salad) until everything is well combined and the spinach is wilted.
Place in a heated bowl and enjoy! Serves 3. |
