Cornmeal Crusted Seitan
I love healthy Seitan - a wheat protein, which has a similar texture to chicken. My daughter thinks this recipe tastes very similar to fried chicken, only she's really happy she's not eating an animal!
1 8 ounce package of Seitan
1/2 cup soy sauce or tamari
1/2 cup water (this will dilute the tamari/soy a litttle)
3 tablespoons agave nectar
1 clove garlic, minced
1 tablespoon freshly grated ginger
1/2 cup medium to fine ground cornmeal
1 teaspoon crushed red pepper flakes
1 teaspoon dried thyme
1 teaspoon fried oregano
1 teaspoon cumin
pinch of sea salt
3-4 tablespoons grapeseed oil for frying
Preheat oven to 350 degrees.
In a baking dish place the seitan with tamari, water, agave, garlic and ginger. Bake for one
hour. Remove and set aside to cool. Drain and cut the seitan in to slices.
In a large bowl, mix together cornmeal, red pepper flakes, thyme, oregano, cumin and sea salt. Dip
the seitan pieces in the cornmeal mixture coating it well.
In a large skillet heat oil over medium-high heat. Fry the coated seitan on each side for about 2 minutes or until nicely browned and crispy.
Remove from heat, drain on a recycled paper towel. I like to serve this with mashed sweet potatoes and green beans or broccoli.

I am an elementary school teacher and get really confused as to which Dry Erase markers are the best to use - in terms of being non-toxic. Would love your recommendation.
S.U. I have researched this a great deal, as I too teach kids and my favorite dry erase marker is the AusPen. They are really fabulous and I think you'll be very happy if you try their starter kit.
